Main Ingredients
- 4 slices whole wheat bread
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup shredded cheese
- 4 eggs
- 1 cup milk
- Salt and pepper to taste
Preheat oven to 350°F (175°C).
Grease a baking dish.
Layer bread slices at the bottom of the dish.
Spread mixed vegetables over the bread.
Sprinkle shredded cheese on top.
In a bowl, beat eggs and milk together. Add salt and pepper.
Pour egg mixture over the vegetables and bread.
Bake for 45 minutes or until set.
