Ingredients

  • 4 slices whole wheat bread
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup shredded cheese
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Grease a baking dish.
  3. Layer bread slices at the bottom of the dish.
  4. Spread mixed vegetables over the bread.
  5. Sprinkle shredded cheese on top.
  6. In a bowl, beat eggs and milk together. Add salt and pepper.
  7. Pour egg mixture over the vegetables and bread.
  8. Bake for 45 minutes or until set.
