Ingredients 

Shortcake

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • cup milk

Topping

  • 1 lb fresh strawberries, sliced
  • ¼ cup sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in milk until just combined. Do not overmix.
  5. Drop dough by spoonfuls onto a baking sheet.
  6. Bake for 12-15 minutes or until golden brown. Let cool.
  7. Mix sliced strawberries with ¼ cup sugar. Let sit for 10 minutes.
  8. Whip the heavy cream with vanilla extract until soft peaks form.
  9. Assemble shortcakes by splitting them in half, topping with strawberries and whipped cream.
