  • 1 lb Shrimp peeled and deveined
  • 1 cup Mango diced
  • 0.5 cup Red onion diced
  • 0.25 cup Cilantro chopped
  • 1 Lime juiced
  • 1 Jalapeño diced
  • 8 Corn tortillas
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Instructions 

  1. Prepare mango salsa by dicing mango, red onion, cilantro, and jalapeño. Mix together with lime juice, salt, and pepper.
  2. Season shrimp with salt and pepper. Cook in olive oil until pink.
  3. Warm tortillas in a pan.
  4. Assemble tacos by placing shrimp in tortillas and topping with mango salsa.
