Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined cut into bite-sized pieces
  • 1 cup Lime juice freshly squeezed
  • 1 Red onion, finely chopped
  • 1 Jalapeño, finely chopped seeds removed for less heat
  • 1 Cucumber, diced
  • 1 Tomato, diced
  • ¼ cup Cilantro, chopped
  • 1 teaspoon Salt to taste
  • 1 Avocado, diced optional

Instructions 

  1. 1. In a large mixing bowl, combine shrimp and lime juice. Let it sit for 10 minutes until shrimp turns opaque.
  2. 2. Add red onion, jalapeño, cucumber, tomato, and cilantro to the bowl. Mix well.
  3. 3. Season with salt to taste. If using, gently fold in diced avocado.
  4. 4. Serve immediately with tortilla chips or on tostadas.
