  • 1 cup butter softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup raspberry jam
  • ½ cup sliced almonds

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the vanilla extract and eggs one at a time.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, mixing until just combined.
  5. Drop dough by rounded tablespoons onto the prepared baking sheet. Make an indentation in the center of each cookie and fill with a small amount of raspberry jam. Sprinkle with sliced almonds.
  6. Bake for 12 minutes or until edges are lightly golden. Cool on a wire rack.
