  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • ½ cup maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts (optional)

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, pumpkin puree, maple syrup, pumpkin pie spice, salt, and vanilla extract. Mix well.
  3. If using, fold in the chopped nuts.
  4. Spread the mixture evenly in a greased baking dish.
  5. Bake for 30 minutes or until the edges are golden brown.
