- 2 cups rolled oats
- 1 cup pumpkin puree
- ½ cup maple syrup
- 1 teaspoon pumpkin pie spice
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup chopped nuts (optional)
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the oats, pumpkin puree, maple syrup, pumpkin pie spice, salt, and vanilla extract. Mix well.
If using, fold in the chopped nuts.
Spread the mixture evenly in a greased baking dish.
Bake for 30 minutes or until the edges are golden brown.
Let cool before cutting into bars. Enjoy!
