Ingredients 

Main Ingredients

  • 4 large Eggs
  • 100 g Caster sugar
  • 100 g Self-raising flour sifted
  • 1 tablespoon Warm water
  • 200 ml Double cream whipped
  • 200 g Lemon curd
  • as needed Icing sugar for dusting

Instructions 

  1. Preheat your oven to 200°C (180°C fan) and line a baking tray with parchment paper.
  2. In a mixing bowl, whisk the eggs and caster sugar until thick and pale.
  3. Gently fold in the sifted self-raising flour and warm water.
  4. Pour the mixture into the prepared baking tray and spread evenly.
  5. Bake for 10-12 minutes until golden and springy to the touch.
  6. Turn the sponge onto a sheet of parchment paper dusted with icing sugar. Roll up the sponge with the paper and let it cool.
  7. Unroll the cooled sponge, spread with whipped cream and lemon curd, then re-roll without the paper.
  8. Dust with more icing sugar before serving.
