Ingredients 

Shortbread Crust

  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • ½ cup powdered sugar

Lemon Filling

  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • cup fresh lemon juice

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, 2 cups of flour, and powdered sugar. Mix until well combined.
  3. Press the mixture into the bottom of a greased 9x13 inch baking pan.
  4. Bake the crust for 20 minutes or until lightly golden.
  5. In another bowl, whisk together granulated sugar and ¼ cup of flour. Add eggs and lemon juice, and whisk until smooth.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20 minutes or until the filling is set.
  8. Let cool completely before cutting into bars.
