Shortbread Cookies
- 1 cup unsalted butter softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
- 1 cup dark chocolate chips melted
Preheat oven to 350°F (175°C).
Cream together butter and sugar until light and fluffy.
Mix in vanilla extract.
Gradually add flour and salt, mixing until combined.
Roll dough into a log, wrap in plastic, and chill for 30 minutes.
Slice dough into ¼-inch thick rounds and place on a baking sheet.
Bake for 20 minutes or until edges are golden.
Let cookies cool completely.
Dip half of each cookie into melted chocolate and place on parchment paper to set.
