Chickpea Salad Recipe
A quick and easy chickpea salad that's perfect for a light lunch or side dish.

Main Ingredients
- 1 can Chickpeas drained and rinsed
- 1 cup Cherry Tomatoes halved
- ½ cup Cucumber diced
- ¼ cup Red Onion finely chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt or to taste
- ½ teaspoon Black Pepper freshly ground
- ¼ cup Parsley chopped
In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, and red onion.
Drizzle with olive oil and lemon juice. Season with salt and black pepper.
Toss everything together until well mixed. Garnish with chopped parsley.
Serve immediately or refrigerate for later.
