Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Brown sugar
  • 1 cup Mashed bananas about 2 ripe bananas
  • 1 cup Blueberries fresh or frozen
  • 1 large Egg
  • ½ cup Milk
  • ¼ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the oats, flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the brown sugar, mashed bananas, egg, milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
