Ingredients 

Tartlet Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup heavy cream
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries strawberries, blueberries, raspberries

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs.
  3. Add egg yolk and cold water. Mix until dough forms.
  4. Press dough into tartlet pans. Bake for 15 minutes or until golden brown. Let cool.
  5. In another bowl, whisk heavy cream, sugar, and vanilla until stiff peaks form.
  6. Fill cooled tartlet shells with whipped cream mixture. Top with mixed berries.
