  • 2 medium Zucchini spiralized
  • 1 cup Basil leaves
  • ¼ cup Pine nuts toasted
  • ½ cup Parmesan cheese grated
  • 2 cloves Garlic
  • ¼ cup Olive oil
  • to taste Salt and pepper

Instructions 

  1. Spiralize the zucchini into noodles using a spiralizer.
  2. In a blender, combine basil leaves, pine nuts, Parmesan cheese, garlic, and olive oil. Blend until smooth to make the pesto.
  3. Heat a frying pan over medium heat. Add the zucchini noodles and cook for 2-3 minutes until slightly tender.
  4. Toss the cooked zucchini noodles with the pesto sauce. Season with salt and pepper to taste.
  5. Serve immediately and enjoy!
