  • 2 Eggs, beaten
  • ½ cup Parmesan cheese, grated
  • 2 tablespoon Olive oil for frying

Instructions

  2. 2. In a mixing bowl, combine zucchini, flour, salt, pepper, eggs, and Parmesan cheese.
  3. 3. Heat olive oil in a frying pan over medium heat.
  4. 4. Drop spoonfuls of the mixture into the pan and flatten slightly.
  5. 5. Cook until golden brown on both sides, about 3-4 minutes per side.
