Ingredients

  • 4 zucchinis medium-sized
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes halved
  • ½ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a mixing bowl, combine cooked quinoa, cherry tomatoes, feta cheese, olive oil, dried oregano, salt, and black pepper.
  4. Stuff the zucchini boats with the quinoa mixture.
  5. Place the stuffed zucchinis on a baking sheet and bake for 25 minutes or until zucchinis are tender.
  6. Serve warm and enjoy!
