Main Ingredients
- 1 cup grated zucchini
- 2 ripe bananas, mashed
- ½ cup sugar
- ¼ cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
Preheat oven to 350°F (175°C).
In a bowl, mix zucchini, bananas, sugar, butter, egg, and vanilla.
In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Pour batter into muffin tins.
Bake for 20 minutes or until a toothpick comes out clean.
