Ingredients 

Main Ingredients

  • 1 cup grated zucchini
  • 1 cup grated apple
  • 2 eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, beat the eggs. Add sugar, oil, and vanilla extract. Mix well.
  3. Stir in grated zucchini and apple.
  4. In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet mixture, stirring until just combined.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
