Vinaigrette
- ¼ cup olive oil
- 2 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- to taste salt
- to taste black pepper
Salad
- 6 cups mixed greens
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, sliced
In a mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, and minced garlic.
Season with salt and black pepper to taste.
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
Drizzle the vinaigrette over the salad and toss to coat evenly.
