Ingredients 

Vinaigrette

  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • to taste salt
  • to taste black pepper

Salad

  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, sliced

Instructions 

  1. In a mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, and minced garlic.
  2. Season with salt and black pepper to taste.
  3. In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
  4. Drizzle the vinaigrette over the salad and toss to coat evenly.
