Ingredients 

Cookies

  • 1 cup Butter softened
  • 1 cup Sugar
  • 2 units Eggs large
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Red Food Coloring

Filling

  • 1 cup Cream Cheese softened
  • ½ cup Butter softened
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and red food coloring.
  4. In another bowl, whisk together flour and baking powder. Gradually add to the butter mixture, mixing until just combined.
  5. Drop dough by rounded tablespoonfuls onto the prepared baking sheet. Bake for 10-12 minutes or until edges are set. Cool completely on wire racks.
  6. For the filling, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
  7. Spread filling on the flat side of half the cookies; top with remaining cookies.
