  • ¼ cup diced tomatoes
  • ¼ cup spinach

Instructions 

  1. Beat the eggs in a bowl.

  3. Add bell peppers, onions, and tomatoes. Cook until soft.
  4. Add spinach and cook until wilted.
  5. Pour the beaten eggs over the veggies.
  6. Cook until the eggs are set, then fold the omelet in half.
