Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup black beans cooked
  • 1 cup corn kernels cooked
  • 1 cup diced bell peppers any color
  • 1 tablespoon olive oil

Instructions 

  1. Heat the skillet over medium heat and add a bit of olive oil.
  2. Place one tortilla in the skillet and sprinkle with cheese, black beans, corn, and bell peppers.
  3. Top with another tortilla and cook until the bottom is golden brown, about 2-3 minutes.
  4. Flip the quesadilla and cook the other side until golden brown and the cheese is melted, another 2-3 minutes.
  5. Remove from skillet, cut into wedges, and serve warm.
