Vegetarian Pumpkin Chili

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup pumpkin puree
- 1 can diced tomatoes (15 ounces)
- 1 can black beans, drained and rinsed (15 ounces)
- 1 can kidney beans, drained and rinsed (15 ounces)
- 1 cup vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the pumpkin puree, diced tomatoes, black beans, kidney beans, and vegetable broth.
Add the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir well to combine.
Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, stirring occasionally.
Taste and adjust seasoning if needed. Serve hot.
