Main Ingredients
- 1 sheet Puff Pastry thawed if frozen
- 2 tablespoon Olive Oil
- 1 cup Mushrooms finely chopped
- 1 cup Spinach chopped
- 1 cup Red Bell Pepper diced
- 1 cup Zucchini diced
- 2 cloves Garlic minced
- 1 teaspoon Thyme dried
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Preheat your oven to 400°F (200°C).
Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant.
Add mushrooms, spinach, red bell pepper, zucchini, thyme, salt, and pepper. Cook until vegetables are tender and moisture has evaporated.
Roll out the puff pastry on a floured surface. Place the vegetable mixture in the center and fold the pastry over to seal.
Place the wellington on a baking sheet and bake for 25-30 minutes, or until golden brown.
Let it cool for a few minutes before slicing and serving.
