Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 Bell peppers, chopped
  • 1 cup Corn kernels
  • 1 cup Black beans, cooked
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 8 Taco shells
  • 1 cup Lettuce, shredded
  • ½ cup Cheddar cheese, shredded
  • 1 Avocado, sliced
  • ½ cup Salsa

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell peppers. Cook until soft.
  3. Stir in corn, black beans, cumin, and chili powder. Cook for another 5 minutes.
  4. Warm taco shells according to package instructions.
  5. Fill taco shells with vegetable mixture. Top with lettuce, cheese, avocado, and salsa.
