Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 3 medium Carrots sliced
  • 2 stalks Celery sliced
  • 2 cups Vegetable Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 2 cups Potatoes diced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the sliced carrots and celery. Cook for about 5 minutes.
  4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  5. Add the diced potatoes, dried thyme, and dried rosemary. Reduce heat and simmer for 30 minutes.
  6. Season with salt and black pepper to taste. Serve hot.
