Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 Zucchini, chopped
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add carrots and celery, cook for 5 minutes.
  4. Add zucchini, diced tomatoes, and vegetable broth.
  5. Stir in dried basil and oregano. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Serve hot.
