Main Ingredients
- 2 tablespoon olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup vegetable broth
- 2 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups mashed potatoes prepared
- to taste salt and pepper
Preheat your oven to 400°F (200°C).
Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add mixed vegetables, vegetable broth, tomato paste, thyme, and rosemary. Stir well and let it simmer for 10 minutes.
Season with salt and pepper to taste.
Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes evenly on top.
Bake in the preheated oven for 20 minutes, or until the top is golden brown.
Let it cool for a few minutes before serving.
