Instructions
Heat the olive oil in a large skillet or paella pan over medium heat.
Add the chopped onion and garlic, and sauté until softened.
Add the bell peppers, green beans, and peas. Cook for another 5 minutes.
Stir in the rice, vegetable broth, smoked paprika, and saffron with its soaking water. Season with salt and pepper.
Bring to a boil, then reduce heat to low and simmer, uncovered, for about 20 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let stand for 5 minutes before serving. Serve with lemon wedges.
