Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup peas
  • 1.5 cups short-grain rice
  • 3 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon saffron threads soaked in 2 tablespoon warm water
  • 1 lemon, cut into wedges for serving
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large skillet or paella pan over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the bell peppers, green beans, and peas. Cook for another 5 minutes.
  4. Stir in the rice, vegetable broth, smoked paprika, and saffron with its soaking water. Season with salt and pepper.
  5. Bring to a boil, then reduce heat to low and simmer, uncovered, for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let stand for 5 minutes before serving. Serve with lemon wedges.
