Ingredients 

Main Ingredients

  • 12 sheets Lasagna noodles cooked
  • 2 cups Marinara sauce
  • 2 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 1 cup Grated Parmesan cheese
  • 1 cup Chopped spinach fresh or frozen
  • 1 cup Chopped zucchini
  • 1 cup Chopped bell peppers
  • 1 cup Chopped mushrooms
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add chopped zucchini, bell peppers, and mushrooms. Cook until tender.
  4. Mix ricotta cheese with chopped spinach in a bowl. Season with salt and pepper.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer lasagna noodles, ricotta mixture, vegetable mixture, marinara sauce, mozzarella, and Parmesan. Repeat layers.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes until cheese is bubbly and golden.
  8. Let lasagna cool for 10 minutes before serving.
