Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk the eggs with salt and black pepper.
Heat olive oil in a skillet over medium heat. Add the onion and bell pepper, and cook until softened.
Add the spinach to the skillet and cook until wilted.
Pour the egg mixture into the skillet and cook for a few minutes until the edges start to set.
Sprinkle the crumbled goat cheese on top.
Transfer the skillet to the oven and bake for 10-15 minutes, or until the frittata is fully set.
Remove from the oven and let it cool slightly before slicing and serving.
