  • 6 eggs
  • 1 cup chopped bell peppers
  • 1 cup chopped spinach
  • ½ cup chopped onions
  • ½ cup grated cheese
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk the eggs and season with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the onions and bell peppers, and cook until softened.
  4. Add the spinach to the skillet and cook until wilted.
  5. Pour the egg mixture over the vegetables and cook until the edges start to set.
  6. Sprinkle the grated cheese on top and transfer the skillet to the oven. Bake for 10-15 minutes, or until the frittata is fully set.
  7. Remove from the oven and let it cool slightly before slicing and serving.
