  • 1 cup Pumpkin Puree
  • ½ cup Coconut Oil, melted
  • ½ cup Maple Syrup
  • 2 tablespoon Ground Flaxseed mixed with 6 tablespoon water
  • 1 teaspoon Vanilla Extract
  • 1 ¾ cup Whole Wheat Flour
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 2 teaspoon Pumpkin Pie Spice

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, whisk together the pumpkin puree, melted coconut oil, maple syrup, ground flaxseed mixture, and vanilla extract.
  3. In another bowl, combine the whole wheat flour, baking powder, baking soda, salt, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
