  • 1 cup Almond milk or any plant-based milk
  • 2 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Pumpkin pie spice
  • ¼ teaspoon Salt

Instructions 

  1. In a mixing bowl, whisk together the pumpkin puree, almond milk, maple syrup, and vanilla extract.
  2. In another bowl, mix the flour, baking powder, pumpkin pie spice, and salt.
  3. Combine the wet and dry ingredients, stirring until just combined. Do not overmix.
  4. Heat a griddle or non-stick pan over medium heat and lightly grease it.
  5. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
