Vegan Pop Tarts
Homemade vegan pop tarts with a delicious fruit filling.

Pastry
- 2 cups all-purpose flour
- ½ cup vegan butter cold and cubed
- ¼ cup cold water
Filling
- 1 cup fruit jam any flavor
Icing
- 1 cup powdered sugar
- 2 tablespoon non-dairy milk
- ½ teaspoon vanilla extract
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the flour and cold vegan butter. Use a pastry cutter or your hands to mix until it resembles coarse crumbs.
Add the cold water, a little at a time, until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
Roll out the dough on a floured surface to about ⅛ inch thick. Cut into rectangles.
Place a tablespoon of fruit jam in the center of half of the rectangles. Top with the remaining rectangles and press the edges with a fork to seal.
Place the pop tarts on the prepared baking sheet and bake for 20 minutes, or until golden brown.
While the pop tarts cool, mix the powdered sugar, non-dairy milk, and vanilla extract to make the icing. Drizzle over the cooled pop tarts.
