Crust
- 1.5 cups Graham cracker crumbs
- ¼ cup Sugar
- ½ cup Melted butter
Filling
- 24 oz Cream cheese, softened
- 1 cup Sugar
- 1 cup Ube halaya (purple yam jam)
- 4 Large eggs
- 1 teaspoon Vanilla extract
Preheat your oven to 325°F (165°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
In another bowl, beat the cream cheese and sugar until smooth. Add the ube halaya and mix until well combined.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Pour the filling over the crust in the springform pan.
Bake for 60 minutes or until the center is set. Let it cool completely before refrigerating for at least 4 hours or overnight.
