Ingredients 

Meatballs

  • 1 lb Ground Turkey
  • 1 cup Breadcrumbs
  • 1 Egg beaten
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Soup

  • 8 cups Chicken Broth
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 cups Spinach fresh, chopped

Instructions 

  1. In a mixing bowl, combine ground turkey, breadcrumbs, beaten egg, garlic powder, onion powder, salt, and black pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a boil. Add carrots, celery, onion, garlic, thyme, basil, salt, and black pepper. Reduce heat and simmer for 10 minutes.
  3. Gently add the meatballs to the simmering broth. Cook for another 15-20 minutes, until meatballs are cooked through.
  4. Stir in the chopped spinach and cook for an additional 2-3 minutes, until wilted. Serve hot.
