  • 4 Bolillo rolls or any crusty bread
  • 2 cups Refried beans
  • 1 cup Shredded cheese like Oaxaca or Monterey Jack
  • 1 cup Pico de gallo

Instructions 

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Slice the bolillo rolls in half lengthwise.
  3. 3. Spread a generous layer of refried beans on each half.
  4. 4. Top with shredded cheese.
  5. 5. Place the rolls on a baking sheet and bake for about 10 minutes, or until the cheese is melted and bubbly.
  6. 6. Remove from the oven and top with pico de gallo. Serve immediately.
