Traditional Mexican Molletes
Molletes are a traditional Mexican open-faced sandwich, typically made with bolillo rolls, refried beans, cheese, and pico de gallo.

Main Ingredients
- 4 Bolillo rolls or any crusty bread
- 2 cups Refried beans
- 1 cup Shredded cheese like Oaxaca or Monterey Jack
- 1 cup Pico de gallo
1. Preheat your oven to 350°F (175°C).
2. Slice the bolillo rolls in half lengthwise.
3. Spread a generous layer of refried beans on each half.
4. Top with shredded cheese.
5. Place the rolls on a baking sheet and bake for about 10 minutes, or until the cheese is melted and bubbly.
6. Remove from the oven and top with pico de gallo. Serve immediately.
