Main Ingredients
- 2 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Tomatoes, chopped
- 2 cups Vegetable broth
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ¼ cup Heavy cream
Heat olive oil in a pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth using a blender.
Return the soup to the pot, stir in salt, pepper, and heavy cream. Heat through and serve.
