  • 1 sheet puff pastry thawed if frozen
  • 3 medium tomatoes sliced
  • 1 cup fresh basil leaves chopped
  • 1 cup mozzarella cheese shredded
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Roll out the puff pastry on the parchment paper.
  4. Arrange the tomato slices evenly on the puff pastry.
  5. Sprinkle the chopped basil and shredded mozzarella cheese over the tomatoes.
  6. Drizzle with olive oil and season with salt and black pepper to taste.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and the cheese is bubbly.
  8. Remove from the oven and let cool slightly before serving.
