Tomato Basil Omelette

Main Ingredients
- 2 large eggs
- 1 small tomato diced
- 2 tablespoon fresh basil chopped
- 1 tablespoon olive oil
- to taste salt
- to taste black pepper
1. Crack the eggs into a mixing bowl, add a pinch of salt and pepper, and whisk until well combined.
2. Heat the olive oil in a frying pan over medium heat.
3. Pour the egg mixture into the pan and cook for about 2-3 minutes, until the edges start to set.
4. Add the diced tomato and chopped basil evenly over one half of the omelette.
5. Fold the other half of the omelette over the filling and cook for another 2-3 minutes, until fully set.
6. Slide the omelette onto a plate and serve immediately.
