Tomato Basil Mozzarella Galette

- 1 sheet Puff pastry thawed
- 2 cups Cherry tomatoes halved
- 1 cup Mozzarella cheese shredded
- 1 cup Fresh basil leaves chopped
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the puff pastry on a lightly floured surface to a 12-inch circle. Transfer to the prepared baking sheet.
Arrange the cherry tomatoes, mozzarella, and basil leaves on the pastry, leaving a 2-inch border around the edges.
Drizzle with olive oil and season with salt and pepper.
Fold the edges of the pastry over the filling, pleating as you go to form a rustic edge.
Bake for 35-40 minutes, or until the pastry is golden and the cheese is bubbly.
Let cool slightly before slicing and serving.
