Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • ¼ cup sugar

Filling

  • 2 packages firm tofu 14 oz each
  • 1 cup sugar
  • ½ cup lemon juice
  • 1 teaspoon vanilla extract
  • ¼ cup cornstarch
  • ¼ cup soy milk

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of a 9-inch springform pan.
  3. Blend tofu, 1 cup sugar, lemon juice, vanilla extract, cornstarch, and soy milk until smooth.
  4. Pour mixture over crust.
  5. Bake for 60 minutes. Let cool, then refrigerate for at least 4 hours before serving.
