Crepe Batter
- 1 cup all-purpose flour
- 2 cups milk
- 3 units eggs
- 2 tablespoon butter, melted
Tiramisu Filling
- 1 cup mascarpone cheese
- 1 cup heavy cream
- ½ cup sugar
- 1 tablespoon instant coffee dissolved in 2 tablespoon hot water
- 1 teaspoon vanilla extract
1. In a mixing bowl, whisk together flour, milk, eggs, and melted butter until smooth.
2. Heat a non-stick pan over medium heat. Pour ¼ cup of batter into the pan, swirling to coat the bottom. Cook until edges lift, then flip and cook the other side. Repeat with remaining batter.
3. In another bowl, beat mascarpone, heavy cream, sugar, dissolved coffee, and vanilla extract until stiff peaks form.
4. To assemble, place one crepe on a plate, spread a thin layer of tiramisu filling, and repeat until all crepes are used. Top with a final layer of filling and dust with cocoa powder.
