Three Berry Pie
A delicious pie made with a mix of strawberries, blueberries, and raspberries.

Pie Crust
- 2 cups all-purpose flour
- 1 cup unsalted butter cold, cut into cubes
- ¼ cup ice water
Filling
- 1 cup strawberries hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- ¾ cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Preheat oven to 375°F (190°C).
In a mixing bowl, combine flour and butter. Mix until it resembles coarse crumbs. Add ice water and mix until dough forms. Divide dough in half, wrap in plastic, and refrigerate for 30 minutes.
Roll out one half of the dough and fit into a pie dish. In another bowl, combine berries, sugar, cornstarch, lemon juice, and zest. Pour into pie crust.
Roll out the second half of the dough and place over the filling. Seal and crimp the edges. Cut slits in the top crust to allow steam to escape.
Bake for 60 minutes or until crust is golden and filling is bubbly. Cool before serving.
