Instructions
Preheat oven to 350°F (175°C).
Cream together the butter and sugar until light and fluffy.
Mix in the vanilla and peppermint extracts.
Gradually add the cocoa powder, flour, and salt. Mix until combined.
Roll the dough into small balls and flatten them on a baking sheet.
Bake for 10 minutes. Let cool completely.
Melt the chocolate chips and stir in the peppermint extract.
Dip each cookie into the melted chocolate and place on parchment paper to set.
