Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 cup Green curry paste
  • 1 can Coconut milk
  • 2 cups Chicken breast, sliced
  • 1 cup Mixed vegetables (bell peppers, zucchini, etc.)
  • 1 tablespoon Fish sauce
  • 1 tablespoon Sugar
  • 1 handful Fresh basil leaves

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the green curry paste and cook for 2-3 minutes.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the chicken and cook until it's no longer pink.
  5. Add the mixed vegetables and cook until tender.
  6. Stir in the fish sauce and sugar, then add the basil leaves.
  7. Serve hot with steamed rice.
