Sweet Vanilla Bean Biscotti Recipe

- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 vanilla bean, seeds scraped
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, beat eggs, vanilla extract, and vanilla bean seeds. Add to dry ingredients and mix until combined.
Divide dough in half. Shape each half into a log about 12 inches long and 2 inches wide. Place on baking sheet.
Bake for 25-30 minutes, until golden. Remove from oven and let cool for 10 minutes.
Using a sharp knife, cut logs diagonally into ½-inch slices. Place slices cut side down on baking sheet.
Bake for another 10-15 minutes, until crisp. Cool completely before serving.
