- 2 cups mashed sweet potatoes cooked and mashed
- ½ cup bread crumbs
- 1 egg beaten
- ¼ cup green onions chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoon olive oil for frying
In a mixing bowl, combine mashed sweet potatoes, bread crumbs, beaten egg, chopped green onions, salt, and black pepper.
Form the mixture into small patties.
Heat olive oil in a frying pan over medium heat.
Cook the patties for about 3-4 minutes on each side, or until golden brown.
