Ingredients 

Main Ingredients

  • 2 cups grated sweet potatoes
  • 1 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup milk
  • 2 eggs beaten
  • 2 tablespoon melted butter
  • 1 tablespoon maple syrup

Instructions 

  1. In a large mixing bowl, combine grated sweet potatoes, flour, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together milk, beaten eggs, melted butter, and maple syrup.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a frying pan over medium heat and lightly grease it with butter or oil.
  5. Scoop ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with additional maple syrup or your favorite toppings.
