Sweet Potato Lentil Stew Recipe

Main Ingredients
- 2 cups diced sweet potatoes
- 1 cup red lentils rinsed
- 1 large onion chopped
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 2 cups spinach fresh, chopped
1. Heat a large pot over medium heat. Add a splash of oil, then add the chopped onion and garlic. Sauté until the onion is translucent.
2. Add the diced sweet potatoes, rinsed lentils, and all the spices. Stir well to combine.
3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 30-35 minutes, or until the lentils and sweet potatoes are tender.
4. Stir in the chopped spinach and let it cook for another 5 minutes.
5. Adjust the seasoning with salt and pepper to taste. Serve hot.
